WHere is a simplified interpretation of a beverage featured on the seasonal menu. It's a large-volume premix that is loaded full of flavours of the Christmas time, which makes it excellent for your celebration. Save the extra cordial you can use for breakfast cocktails, desserts, or to make more rounds of this cocktail.

Serves 10 servings
For the Citrus Syrup (makes 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
Ingredients for the Drink (yields 850ml, serving 10)
400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (from the recipe above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing
Instructions
For the Cordial: Place the listed components inside a pan, heat until it reaches a simmer, agitating to dissolve. Then, turn off the stove and leave to cool completely. Decant to a clean bottle, close it keeping it in the refrigerator, it can be stored for up to a month.
To make Batch Mix: Combine all the liquids in a sizeable container, let it rest for 60 minutes, then strain , ideally through a fine cloth, so it's fully clarified.
To serve: Add 85ml of the cocktail base to a mixing glass filled with ice, gently stirring gently for one minute to cool it down. Filter into a frosted cocktail glass or a similar vessel, top with the cranberries and complete it with a light spray of the essential oil over the drink.
